Creamy Celery Soup

Have you tasted our celery yet? It's pretty amazing, if we do say so ourseves - unlike any that you find on a grocery store shelf! This dairy-free Celery Soup is a perfect way to highlight this humble vegetable, giving you a warm hug from the inside out!

Creamy Celery Soup

¼ c butter or oil
1 large head of celery* (about 5 – 6 cups), thinly sliced with leaves
1 medium onion*, diced
4 cloves garlic*, minced
1 lb. potatoes*, diced into ¼ – ½ inch cubes
4 c vegetable broth
½ c parsley*, chopped
pinch of red pepper flakes
Salt & pepper, to taste
Saute: Heat butter/oil over medium heat, add celery, onion, potatoes, garlic, & generous pinch of salt, saute for 8 – 10 min stirring frequently.

Simmer: Add the stock, bring to a boil, reduce heat to medium low & cook at a gentle boil for 10 min, or until potatoes are just fork tender.

Add herbs: Remove from heat, add the parsley, give a good stir. Enjoy as is or continue to next step.

Puree: Puree the soup using an immersion blender or transfer the soup to a blender & blend until creamy.
