Carrot Ginger Dressing

This bright, sweet & tangy dressing is just as tasty as it is beautiful! Adds some spring freshness as we head into a cozy fall season. Enjoy this on salads, rice bowls, beans, everything!

Carrot Ginger Dressing

1/3 c each,  olive oil & vinegar
2 carrots, chopped roughly (⅔ C )
2 Tbs ginger, peeled & chopped
2 Tbs lemon juice or Apple Cider Vinegar
1 Tbs honey or maple syrup
1 1/2 tsp sesame oil or tahini
1 tsp Miso or 1/4 tsp  salt
---
In a blender, combine all ingredients as listed.  Blend until smooth. 

Add additional salt, honey, & lemon juice as necessary. 

Serve over greens, coleslaw, on wraps. Keeps well in the fridge for 1-2 weeks.
