Rustic, cozy, and deceptively simple, this celeriac hash is all about big flavour from humble ingredients. Roasting brings out the subtle nuttiness of celeriac, while crispy bacon, tender greens, and a splash of cream pull everything together. Finish it with a poached egg and you’ve got an easy, comforting dish that works for brunch or dinner without trying too hard.
Celeriac Hash with Bacon & Greens
1 large celeriac
4 pieces of thick cut bacon
2 bunches of Swiss chard (sub kale or spinach)
2 cloves of garlic finely minced
¼ cup cream
Salt & Pepper to taste
Preheat your oven to 375°F & line baking sheet with parchment paper.
Peel celeriac & cut into ½ inch cubes. Cut bacon into ½ inch strips.
Place celeriac on baking sheet & toss with a generous pinch of salt & pepper. Sprinkle bacon on top.
Bake for about 15 min. Toss & bake for a further 15 - 20 min until the celeriac is cooked through, and both have caramelized.
During the final 5 minutes of roasting add greens to the pan along with cream & garlic. Toss to combine & cook for about 5 min, or until the greens are wilted.
Remove from the oven & serve warm topped with poached egg.
