This is such an amazing way of enjoying cucumber. Basically, a quick pickle recipe. So good added to salads, burgers and well...really, just as it is.
In a mason jar, pack: few fennel* stalks, 1-2 sliced cucumber*, fill halfway up with water, about the other half with apple cider vinegar, and a generous touch of maple syrup*, tiny bit of turmeric and/or 1 T of yellow mustard (yep!). Let sit in the fridge overnight.
