Not only is this beet hummus delicious, it's also beautiful! You can't beat the colour of beets! You can cook the beets any way that you like, but roasting them really concentrates the favour and makes them deliciously sweet!
2 c chickpeas, cooked
1 c beetroot* - cubed, cooked & cooled
2 garlic cloves*
4 T olive oil
3 T lemon juice*
1 T tahini
1 t sea salt
In a food processor or blender, combine all hummus ingredients. Blend until smooth.
Optionally: Garnish with feta & cilantro.
