Farm Fresh Recipes — salad

This recipe for Creamy Cucumber Tomato Salad comes to us from Désirée who works in the Farm Store. She absolutely loves tomatoes and has since childhood. This salad is nice and cooling on a hot day and can easily be made in smaller or larger quantities.

Curious about this funky looking root? Try it raw in this salad, mash it with some kale, add it to stews and soups, or roast it (that’s my favourite) and dip it in a tahini or miso-maple dressing.

Add some roasted fennel and apples on top of a salad mix filled with radicchio to balance those sweet and bitter flavours. Your taste buds will thank you!
