Roasted Swiss Chard with Feta

Looking for a new way to enjoy those vibrant bunches of rainbow chard in your CSA basket? This roasted Swiss chard dish is easy, earthy, and utterly delicious. Roasting brings out the natural sweetness in the chard stems and onions, while the leaves crisp up beautifully in the oven. Add in golden, melty feta and you’ve got a dish that’s equal parts rustic and elegant, perfect as a side or even the star of a light summer meal.

Roasted Swiss Chard with Feta

1 bunch rainbow chard - leaves and stems separated & chopped
1 large onion, chopped
1 Tbsp olive oil
Salt & black pepper to taste
2 Tbsp olive oil
4 oz feta cheese, broken into 1/2 inch pieces

Preheat an oven to 350 degrees F (175 degrees C). Grease a baking sheet with olive oil.

Toss the chard stems & onions in a bowl with 1 tablespoon olive oil. Season with salt & pepper to taste, & spread onto the prepared baking sheet.

Bake in the preheated oven until the chard stems have softened & the onion is starting to brown on the corners, about 15 minutes. Toss the chard leaves with 2 tablespoons of olive oil, salt, & black pepper. Sprinkle the leaves over the stem mixture, then scatter the feta cheese over top.

Return to the oven, & bake until the stems are tender, the leaves are beginning to crisp, & the feta is melted and golden, about 20 minutes.
