
Vegetable-based Tomato Sauce
This is not just tomato sauce. It is vegetable-based tomato sauce & it is worth doing. The taste is absolutely amazing & can be used in a multitude of different ways. Also, think of soup: add coconut milk & you have an amazing soup.
2 onions, chopped
3 sticks of celery (or half a celeriac), chopped
3 carrots, chopped
5 garlic cloves
3 lbs tomatoes (1 quart = 3.5 lbs), chopped*
25 basil leaves

Put onions, celery, carrots in a pot with olive oil. Cook for 2 minutes
Add tomatoes, cook on medium for 30 min
Blend or pass through a food mill.
Add salt & pepper & torn basil leaves. Add some olive oil.
*The original recipe calls for skinning the tomatoes before cooking them (pour boiling water over them to easily peel the skin) or to pass the veggie mix through a food mill. I personally never skin tomatoes & use blender.
