Raw Rutabaga Salad with Apples
1 rutabaga, trimmed and peeled
2 small apples
1 C finely chopped kale
½ C chopped walnuts
5 pitted dates, sliced
1/4 C olive oil
2 T apple cider vinegar
1 T honey
2 t dijon mustard

Combine oil, vinegar, mustard, and honey and whisk until smooth, pour over salad and toss to coat. Enjoy!
