This family recipe comes to us from a CSA member and has been passed down through the family. They aren’t even sure who Mrs. Nielsen is anymore!
Mrs. Nielsen’s Rarebit
3 heaping T flour
2-3 T butter
1 t dry mustard
1/2 t curry powder (optional)
4-5 large garden tomatoes or as many cherry tomatoes pureed to very small chunks (or a can of diced tomatoes)
3 chopped green onions
1 c or more of grated cheddar cheese
Bread for toasting
Melt butter, add flour and stir. Add dry mustard and curry powder. Add the juice from the tomatoes, slowly mix into the flour mixture. Add the rest of the tomatoes, stirring until smooth. Stir in the cheese and the green onions. Simmer for 15 minutes until the cheese is melted.
Serve over toast.
