Radicchio Salad with Pears, Orange & Feta

1 head radicchio
1 pear, halved & thinly sliced
1 navel orange, peeled & segmented
1 shallot, thinly sliced
1/2 cup walnuts, roughly chopped
1/4 cup feta cheese, crumbled

The Dressing
1 garlic clove, minced
1 lemon, juice
Salt & black pepper
1 tsp sumac
2 Tbsp honey
1/4 cup extra virgin olive oil

Core radicchio & separate leaves. If you want to make them slightly less bitter you can soak leaves in cold water for 30 minutes, before drying & assembling the salad.

Arrange radicchio leaves on a large platter, then top with orange segments & pear slices. Add shallots, walnuts, & feta. In a small bowl, add garlic & lemon juice. Season with kosher salt, black pepper, & sumac. Add honey & whisk. While whisking, drizzle extra virgin olive oil & continue to whisk until dressing is well combined.

Pour the dressing over radicchio salad & serve.
