Colourful and delicious, this stir-fry recipe is loaded with red peppers and healthy kale and comes together so quickly - perfect for a weeknight dinner.
Pepper & Kale Stir-Fry
2 Tbsp extra-virgin olive oil
1/2 medium onion, sliced (sub bunch of green onions)
2 cloves garlic, minced or crushed
2 medium red peppers, seeded and thinly sliced
1 bunch kale, de-stemmed & chopped
2 tsp Worcestershire sauce
1 tsp balsamic vinegar
1/2 tsp smoked paprika
Kosher or sea salt, to taste
Fresh cracked black pepper, to taste

Heat a large skillet over medium-high heat. Add oil & then stir in the onions. Cook for about 2 minutes or until the onions are soft.
Add garlic & bell peppers; stir occasionally, cook for 3-5 minutes, or until peppers are softened.
Add kale & stir in the Worcestershire sauce, balsamic vinegar & smoked paprika. Cook for 2-3 minutes or until kale is softened. Season with salt & pepper.
