Parsnip Fries with Miso Sauce

This is one of Milo's favourite ways to eat parsnips, just made into simple fries! Try serving them with this tahini miso dip, or try Jolianne's favourite, a simple mixture of yogurt, miso & curry powder to accompany the parsnip fries.

Parsnip Fries with Miso Sauce

3 parsnips*
2 T olive oil
2 cloves garlic*, peeled and lightly smashed with the flat side of your knife (so that the cloves are still whole)
salt & pepper

For the sauce:
1 T miso paste*
1 T tahini
2 T soy sauce
1 T sesame oil
1 t maple syrup*
0.5 cm piece of ginger*  
    -
Peel the parsnips & cut into strips. Add them to a sealable container, together with garlic, olive oil & salt, shake well to evenly coated parsnips with oil.

Spread on a baking tray & bake at 350°F for about 30 minutes or until they are slightly browned.

In the meantime, mix all ingredients for the sauce in a high speed blender.

Take the parsnip fries out of the oven and serve with the dipping sauce on the side.
