Cabbage Salad with Peanut Vinaigrette

Another tried and tested recipe courtesy of Jolianne's mom. The great thing about cabbage salad recipes is that they last well in the fridge, especially if you don't add the dressing in advance. Mix up all the ingredients and you'll can be enjoying this salad for days!

Cabbage Salad with Peanut Vinaigrette

2 c red cabbage, shredded
2 leaves green cabbage, shredded
1 c spinach, shredded
2 carrots, julienned
3 green onions, finely chopped
1 bunch coriander, finely chopped
¼ c shelled hemp seeds
2 T sesame seeds

Vinaigrette

2 T peanut butter
2 cloves garlic, minced
1 t fresh ginger, finely grated
Juice of 1 lime
2 T sesame oil
1 T tamari
1 T maple syrup
¼ t cumin
Pinch red pepper flakes
    -
Prepare all vegetables and mix all salad ingredients in a bowl

Add all vinaigrette ingredients to a bowl or jar, mix well.

Before serving add dressing to salad and mix gently.
