Tofu Sandwich Spread

This veggie tofu spread is ridiculously easy to make, and oh so delicious! You can use any mix of veggies and herbs you have on hand, and it's equally as delicious on a sandwich, wrapped in a lettuce leaf, or spooned on top of crackers.

Tofu Sandwich Spread

8-ounce package firm tofu
1/2 cup mayonnaise (vegan or regular)
1 large celery stalk, finely diced
1 green onion thinly sliced

2T finely chopped dill, cilantro, parsley - whatever soft herb you like.
2 tablespoons nutritional yeast (optional)
Salt & pepper, to taste
Using your hands, crumble the tofu finely into a mixing bowl. Or, you can break the tofu into a few pieces, place in a food processor, and pulse on and off until finely and evenly chopped, then transfer to a mixing bowl.

Add the mayonnaise and celery. Mix thoroughly. Stir in green onions, herbs, & nutritional yeast (if using). Season with salt & pepper.
